Beginning Monday, January 6, the School will be offering a fabulous series of evening WINE CLASSES for the public with Alexandra Evans, Sommelier and Stratford Chefs School Wine and Service Instructor.

Perfect for the wine lover and those who want to learn more about the fascinating world of wine, these classes will mirror the curriculum taught to our full-time Students. Starting with Wines 101 - the essentials of wine tasting - classes will progress into explorations of Old World and New World wine producing countries, including France, Italy, Spain, Australia, South Africa and more!

Attendees will learn about various regions, their history and tradition, tasting techniques, food pairing essentials, with expert instruction and hands-on, guided tastings that will refine the palate and enhance appreciation.

It was the School's great pleasure to have Trevor Gulliver, co-founder of influential London UK restaurant St. John, at the School last week for a private group wine tasting hosted by Bob and Frances Latham's Winesmith Services. Attendees were fortunate to meet Trevor Gulliver and taste several incredible wines bottled under the St John label, produced in France and on the St John wine list.

St. John, which saw its nose-to-tail cooking philosophy become a global culinary revolution, owes its enduring success to common sense: “We've just done what we thought was the right thing to do at the time," explains Mr. Gulliver, who opened St. John Smithfield with chef Fergus Henderson in October, 1994. Over the years, St John's business has grown and evolved to add two more locations, associated bakeries, and a winery in La Livinière, in the south of France.

Gulliver had visited Toronto to host two St. John pop-up dinners at Oliver & Bonacini's The Dorset, and kindly made a side trip to Stratford!

Kudos to Stratford Chefs School Alumna Carrie Rau (Class of 2004), an Ontario-based sommelier, educator, and chef of Cree descent, who in 2020 co-founded Vinequity, a nonprofit that provides mentoring and scholarships to support the education of BIPOC wine professionals.

Rau's efforts are helping to grow the number of Indigenous North American wine professionals, like the talented group of First Nations vintners bringing their heritage to the fore, featured in Saveur.
