For those who may be asking why the School is holding our March 9 Gala Dinner & Auction in Elora, read on!

The Elora Mill and its parent company, Pearle Hospitality, have been valued Alumni partners of Stratford Chefs School for many years. This valuable relationship began when Aaron Ciancone, now Owner and President of Pearle Hospitality, graduated from the School in 1997.

Not only is the Elora Mill a one-of-a-kind destination and one of Canada's premiere Hotels, it is also a sufficiently large space for our Gala event, and includes an expert event team that can assist the School in executing our large event. Elora Mill generously provides their beautiful venue at a rate that allows the School to maximize fundraising event revenue. Hosting the Gala event in Elora is also strategic to our goal of re-connecting and re-engaging with some of our traditional donor support base, who come from outside of Stratford.

The Elora Mill is a stunning venue that will provide the perfect backdrop for an unforgettable evening, crafted by a team made up of the School's Chef Instructors, the graduating Class of 2025, and the talented team at Elora Mill. Our Canadian Guest Chefs Program is officially underway! Every February at the School, prestigious Chefs from around the province, and from our own backyard, are invited to bring their cuisine to Stratford Chefs School.

This unique Program is a valuable feature of Stratford Chefs School's professional cookery curriculum. Guest Chefs are experts working in the hospitality industry who come from varied cultural and culinary backgrounds to lead Student Chef Dinner Labs. They share real-world experience and offer once-in-a lifetime mentorship opportunities while working alongside our Level 2 students, to prepare and serve exceptional, multi-course dinner menus for the public.

February at the School features our popular Canadian Guest Chef Dinner Series! Acclaimed Chefs from across the province, and from our own backyard, come to the School and mentor our Level 2 Students, working alongside them to prepare and serve exceptional Guest Chef dinner menus.

We're thrilled to launch the Series on Tuesday, February 4 with Chef Jonathan Gushue, chef-proprietor of The Gate, in Flesherton, Ontario. For more than three decades, Chef Gushue has been satisfying palates with a natural culinary style and inventiveness that balances both tradition, locality, and imagination. Most recently he founded The Gate with front-of-house veteran Jennifer Belanger, a restaurant that features modern European cuisine in the heart of the beautiful Grey County Highlands.
